Ingredients for this End of the Rainbow Board 

The focus for the ingredients on this board is GREEN – with some colorful touches for the rainbow. You can select the amount you need based on the people you are serving. Here are the ingredients I used to make this board:

  • Guacamole 
  • Sliced bread
  • Green grapes
  • Cucumbers (sliced)
  • Green bell peppers (sliced)
  • Kiwis (sliced)
  • Celery (chopped)
  • 1 avocado
  • Raspberries (red)
  • Chopped carrots (orange)
  • Blue yellow and green M&M’s
  • Blackberries
  • Cubed white cheese

Instructions to Make an End of the Rainbow Board 

To make this board you’ll want a medium board (of course you can make it bigger or smaller based on where you are serving this). I used a rectangular board but a circle would also make a cute board.

Set your kiwi slices up in a pile and then start assembling your rainbow above them! There are several ways to cut kiwi – for this board I made circle slices.

  • First use blue m&ms 
  • Then diced celery 
  • Then diced carrots 
  • Finish with raspberries

Add your guacamole to a small bowl and place it near the top of the board.
Next, slice an avocado in half, remove the pit, and place it at the bottom of your board. Fill it with yellow candy so it looks like gold coins. This is your pot of gold!
Around the outside of the board, spread out the grapes, cucumbers, bell peppers, and kiwi. Fan slices out so it looks full and fun. The goal is to have as little of the board or platter showing! You can use cucumber and cheese to make St. Patrick’s day hats, or cut out bread and guacamole to look like a clover to add some variety to your board! For final touches add berries M&Ms and any other ingredients to fill up the board!

Now you have made a fun St. Patrick’s day charcuterie board! This is perfect for a brunch or as a fun appetizer!
