Mediterranean Whipped Feta Board

Ingredients
  

For the Spread

  • 6 oz feta cheese crumbled
  • 4 oz unsalted Cream Cheese softened
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice
  • Freshly cracked black pepper to taste

For the Topping

  • 1/4 cup cherry tomatoes halved - I ended up using large tomatoes cut into pieces
  • 2 tbsp sun-dried tomatoes chopped
  • 2 tbsp capers
  • Fresh basil and parsley leaves for garnish
  • Red pepper flakes optional for a kick

For the Board

  • Assorted crackers flatbread, or warm pita bread
  • Fresh cucumber and carrot sticks
  • Extra virgin olive oil for drizzling

Instructions
 

  • Prepare the Whipped Feta Butter:
  • In a food processor, combine the crumbled feta and softened cream cheese. Blend until smooth, stopping to scrape down the sides as needed.
  • Add the olive oil, minced garlic, lemon zest, lemon juice, and a pinch of black pepper. Continue blending until the mixture is light and fluffy.
  • Spread on the Board:
  • Transfer the whipped feta butter onto a serving board or large platter. Use the back of a spoon to spread it out evenly, creating swirls for texture.
  • Add the Mediterranean Toppings:
  • Scatter the sliced kalamata olives, halved cherry tomatoes, chopped sun-dried tomatoes, and capers over the whipped feta layer.
  • Sprinkle toasted pine nuts on top for a crunchy bite.
  • Garnish and Drizzle:
  • Garnish the board with fresh basil and parsley leaves. Drizzle extra virgin olive oil across the top, and if you like a little heat, add a sprinkle of red pepper flakes.
  • Serve:
  • Pair your whipped feta butter board with an assortment of crackers, flatbread, or warm pita. Add fresh veggie sticks like cucumber and carrot on the side for dipping.
