How to Make your Own Charcuterie Board Crackers

I’ve been making charcuterie boards for years, but it never occurred to me to make my own charcuterie board crackers. Like many other things, I assumed they would take forever and probably not be worth it. Turns out, I was completely wrong. Homemade crackers are fast, simple, and honestly far more delicious and wholesome than anything you can buy at the store. I’m hooked and now can’t wait to experiment with every flavor variation imaginable. These are one easy way to step upi your next cheese or charcuterie board.

These crackers bake up thin and crunchy, making them the perfect companion for cheese boards, charcuterie spreads, dips, or just a casual snack plate. You can keep the flavor classic or play around with seasonings, you can really make them your own.

Base Ingredients

This recipe starts with just four pantry staples:

  • All-purpose flour
  • Salt
  • Water
  • Olive oil

It’s fast to mix—just a bowl and a spoon, no kneading required. I keep the salt in the dough fairly mild so that you can sprinkle extra on top if you like your crackers saltier or want them to pair well with dips and cheeses.

Flavor Ideas

One of the best parts of homemade crackers is how easily you can customize them. Stick mostly to dry ingredients so the dough stays easy to roll out, but feel free to experiment. I looked at different combinations in stores for inspiration, and here are some of my favorites:

  • Garlic & Thyme: 1 tsp garlic powder + 2 tsp dried thyme
  • Honey Chipotle: 1 tbsp honey + 2 tsp ground chipotle
  • Onion & Black Pepper: 1 tsp onion powder + 1/2 tsp ground black pepper
  • Rosemary Sea Salt: 2 tsp dried rosemary (crushed) + 1/2 tsp flaky sea salt
  • Smoked Paprika & Cumin: 1 tsp smoked paprika + 1/2 tsp ground cumin
  • Lemon Herb: 1 tsp lemon zest + 2 tsp dried parsley
  • Parmesan Herb: 2 tbsp finely grated Parmesan + 1 tsp Italian seasoning
  • Everything Seasoning: 1 tbsp everything bagel blend

Feel free to mix and match flavors to suit your cheese board or charcuterie platter theme.

Mixing the Dough

  1. In a large mixing bowl, whisk together the flour, salt, and any dry seasonings.
  2. Add water, olive oil, and any liquid additions like honey. Stir with a wooden spoon or spatula until a rough dough forms.
  3. If some flour remains at the bottom of the bowl, just fold it in with your hands.
  4. You can roll the dough out right away, or let it rest for about 10 minutes—it stays very easy to work with.

Rolling and Cutting

  1. Divide the dough into two pieces for easier handling.
  2. Roll out one portion at a time on parchment paper. Aim for very thin crackers (less than 1/8 inch) and try to keep the thickness consistent. Thicker areas will bake softer.
  3. Use a sharp knife or pizza cutter to cut the dough into squares, rectangles, diamonds, or rustic shapes. Smaller or pointy pieces will brown faster.

Baking the Crackers

  1. Transfer the parchment with the cut dough to a baking sheet.
  2. Bake at 400°F for 10–15 minutes, or until the edges start to turn golden brown. Baking time varies depending on size, thickness, and your desired crispiness.
  3. Let the crackers cool completely on the pan—they will continue to crisp as they cool.

Serve them alongside cheese, charcuterie, dips, or hummus, or enjoy a few by themselves while prepping your board.

Storing Homemade Crackers

Once fully cooled, store your crackers in an airtight container at room temperature. A few tips to keep them crispy and fresh:

  • Make sure the container is truly airtight so no moisture sneaks in.
  • Optional: add a food-safe desiccant, especially if you live in a humid climate.
  • If crackers soften over time, re-crisp them by baking at 300°F for 3–5 minutes.

Stored properly, they stay fresh for 5–7 days, though they rarely last that long once they hit the cheese board!
