How to Make this Off the Grill Charcuterie Board
The biggest challenge to make this board is to get everything off the board and serve up hot at the same time. I recommend cooking some of the items that can be kept warm (like the veggies) and then getting the things like the meat and bread added to the board at the last minute. Another strategy is just to add to the board as you cook and let people help themselves.
This board comes together in just a few easy steps, with plenty of room to customize based on what you have on hand or what’s in season.
1. Prep Your Ingredients
- Marinate your meats ahead of time if desired. Use your favorite BBQ rub for ribs or steak, and a simple lemon-herb marinade for the chicken skewers.
- Chop the veggies: Slice carrots, trim asparagus, halve mushrooms, and prep corn for grilling.
- Parboil potatoes for 10 minutes so they finish quickly on the grill.
- Slice bread and tomatoes, and set out basil leaves for layering later.

2. Grill Everything
- Start with the meats, as they take the longest. Grill ribs or steak to your preferred doneness, and cook chicken skewers until fully done.
- Add the parboiled potatoes, corn, carrots, asparagus, pineapple, and mushrooms to the grill. Cook until they have nice grill marks and are tender-crisp.
- Lightly toast the bread slices on the grill for added flavor and crunch.
3. Assemble the Board
- Use a large wooden board or tray.
- Start by placing small bowls of garlic dip and chimichurri sauce on the board.
- Slice meats and arrange them in sections.
- Add grilled veggies and pineapple in colorful clusters.
- Tuck in sliced bread, tomatoes, and basil for fresh contrast.
- Garnish with a few extra herbs or lemon wedges if desired.
