Nothing says summer like spending time on the Mediterranean. But the next best thing to to capture the taste of southern Europe with this Mediterranean Summer Board. This board is full of fresh summer goodness and is best made in mid summer when you can get the freshest tomatoes, watermelon, and cucumbers. Most of the ingredients here are used fresh, but there is a little prep work to roast the peppers and toast the pecans.

Ingredients for a Mediterranean Summer Board
- Marinated artichoke hearts
- Feta cubes
- Watermelon chunks
- Pita chips
- Toasted Pecans
- Cucumber slices or spears – fresh, crunchy, and cooling
- Cherry tomatoes – juicy and sweet, adds color and Mediterranean flair
- Fresh mint or basil leaves – for garnish and a burst of freshness
- Roasted red peppers – slightly smoky and sweet, adds vibrant color
A few other Ideas include:
- Kalamata olives
- Tzatziki dip – creamy, herby dip that pairs well with everything on the board

Preparing the Ingredients
This board is really easy to make, but there are a few ingredients that need to be prepared in advance. You can do this right before you make the board, or for a few ingredients you can do this in advance.
- Feta cubes – cut into large cubes
- Watermelon chunks – cut into large cubes
- Cucumber slices or spears – cut into slices, spears or ribbons
- Cherry tomatoes – cut in half
- Toast you Pecans – put them in a toaster oven for a few minutes to toast
- Roasted red peppers – you can purchase this or roast your own. To roast red peppers, place them directly on a grill, under a broiler, or over a gas flame, turning occasionally until the skins are charred and blistered on all sides. Transfer the peppers to a covered bowl or sealed bag to steam for 10–15 minutes, then peel off the skins, remove the seeds, and slice as desired.

Building this Mediterranean Summer Board
You want to build this board just before you serve the board as it is best a little cold.
After you’ve prepared all your ingredients, putting the board together only takes a few minutes.
This board is all about the colors, so start by laying out your red colors. Places these around your board in 3 different places.
Next you want to place on the lighter colored ingredients (crackers, feta, and artichoke hearts). Keep these in groups or rows to add blocks of color.
Fill in the final gaps on your board with pecans, cucumbers, and garnish with mint. You can cut the mint up and put it around the board or put it on in sections.

Use Color for Visual Appeal: Make your board pop with colorful fruits, herbs like basil or mint, and edible flowers for that vibrant summer feel.
Keep it Cool: Serve your board shortly after assembling and consider using a chilled tray or adding ice packs underneath if you’ll be outdoors.
